Chilli Pepper Egg Curry


We all know eggs are an important source of high quality protein.They also contain a significant amount of vitamins and minerals content and relatively low saturated fat content. So eggs are a valuable component in a healthy diet. Egg protein is of high quality and is easily digestible. Almost all of the fat in the egg is found in the yolk. Eggs are also a good source of iron and phosphorus and also supply calcium, copper, iodine, magnesium, manganese, potassium, sodium, zinc, chloride and sulphur.

It is good if children have one egg everyday.  So it is a good idea to have different egg recipes do this job. Here is one tasty recipe.



What We Need


  • Boiled Eggs - 3 Nos
  • Big Onions - 2 Cups (length wise)
  • Curry Leaves -   1/4 Cup
  • Garlic Chopped - 1/2 Tea Spoon
  • Ginger Chopped - 1/2 Tea Spoon
  • Tomato Chopped - 1 Number
  • Turmeric Powder - 1/4 Tea Spoon
  • Chilli Powder - 1/4 Tea Spoon
  • Coriander Powder - 2 Tea Spoon
  • Pepper Powder - 1/2 Tea Spoon
  • Green Chilli - 3 to 4 Nos
  • Garam Masala Powder - 1/2 Tea Spoon
  • Coriander Leaves - 2 to 3 Table Spoons
  • Fennel Seeds - 1/2 Tea Spoon
  • Oil - 4 Table Spoons
  • Salt - To Taste


Method
  1.  Heat oil in a pan, add fennel seeds, curry leaves, onions, green chillies, ginger and garlic pieces saute well.
  2. Add tomatoes and saute well.
  3. Add all the above mentioned powders and saute it.
  4. Add eggs and coriander leaves and mix well.
  5. Pour quarter cup of water, salt and mix well.
  6. Cover the pan and allow it to cook for 3 to 5 minutes.
  7. Chilli pepper egg curry is ready.
