Egg Omelet Masala Curry


One of the fastest dish we can make, when we do not have much time to prepare meals, is an omelet. Just crack an egg, add some salt and chilli powder and pour it out and fry it. I make this sometimes, when I have prepare lunch quickly. We are also familiar with many types of egg currys. But how would it be, if we were to try out dish , that is a combination of both? I came across this recipe, and gave it a try. It did come out well. I am presenting it here, so that you too can give it a try.


What we need
  • Eggs - 4 numbers
  • Mustard seeds - half a tea spoon
  • Oil - 5 table spoons
  • Red Chillies - 2 or 3 numbers
  • Curry leaves - quarter a cup
  • Big Onions - Half a cup
  • Ginger-Garlic paste - 2 table spoons
  • Tomato paste - half a cup
  • Coconut - one fourth of a cup, grated
  • Tamarind paste - 5 table spoons
  • Turmeric powder - half a tea spoon
  • Chilli powder - 1 tea spoon
  • Coriander powder - 1 tea spoon
  • Pepper powder - one and a half teaspoon
  • Green Chilli - 2 chopped into small pieces
  • Fennel seeds - 1 teas spoon
  • Salt - to taste
Method
  1.  Heat oil in a pan, season with mustard seeds, red chillies and curry leaves.
  2. Saute chopped onions, green chillies, and then ginger-garlic paste.
  3. Add tomato paste saute well. 
  4. Then to that add turmeric powder, chilli powder, coriander powder, pepper powder and salt. Saute it well.
  5. Now add tamarind extract, a little water and allow the curry to boil.
  6. Grind the grated coconut with fennel seeds, and add it to the curry.
  7. Now let us make the omelet.
  8. In a bowl take eggs and add a little turmeric powder, chopped onions, green chillies and salt.
  9. Now make the omelet . Cut the omelet into big pieces.
  10. When the curry is ready, add the pieces of omelet to it and stir well. Allow it to cook for two minutes.
  11. Curry should be a little thicker.
  12. Tasty omelet masala curry is ready.
