Green Chicken Dry

Imagine that you are in a restaurant. You want to order a chicken dish. What would you order? Most of us have a few dishes that we most often think up. That would be chicken 65 or chilli chicken or chicken majoorian or chicken curry. Those would be the usual menu in any hotel. Here is a very different dish that you can prepare. It is tasty and healthy. I have named it "Green Chicken".


The main ingredients are mint leaves and coriander leaves. A good amount of these two have multiple benefits. It is very good for digestion, it gives a lovely green color to the dish and also emits a good flavor to the dish as well.

What We Need
  • Chicken - 1 Kg
  • Big onion - 1or 2  finely chopped
  • Tomato - 1
  • Pudina Leaves (Mint) - 1 cup
  • Coriander Leaves - 1 to 1 and a half cup
  • Curry leaves - quarter a cup
  • Ginger - quarter a cup
  • Garlic - quarter a cup
  • Black peppercorn - 1 to 2 tea spoon
  • Cinnamon - 4 to 5 numbers
  • Clove - 6 to 7 numbers
  • Cardamom - 4 numbers
  • Mustard seeds - half a tea spoon 
  • Fennel seeds - 1 to 2 tea spoons
  • Oil - 5 table spoons
  • Milk - 5 table spoons
  • Coriander powder - 3 tea spoon
  • Sugar - quarter a tea spoon
  • Turmeric powder - half a tea spoon
  • Green chilli - 8 to 15 numbers depending how much you prefer
  • Salt - to taste
 

Method
  1. Clean the chicken and marinate it with a little salt and turmeric powder.
  2. In a pan heat cinnamon, clove, peppercorns, cardamom, fennel seeds, ginger, garlic, green chillies, mint and coriander leaves.
  3. Blend it in a mixie and make it a fine paste. If necessary add a little water to blend well. Now we have a green paste.
  4. Now heat oil in a pan add mustard seeds then add curry leaves and chopped onions and saute well.
  5.  Add tomato pieces and saute a little. 
  6. Add quarter tea spoon of turmeric powder, coriander powder and saute it. To this add the green paste and saute well.
  7. To this add quarter tea spoon sugar, salt and chicken pieces and mix well.
  8. Add a little water and milk and mix well. Cover it and allow it to cook for 30 to 40 minutes.
  9. Green Chicken Dry is ready

Chana Rajma Cutlet


Chana in English is called "Chick Peas".
Chana is a very good source of protein. They are also very high in dietary fiber.  This makes Chana a healthy food.  It is also a good source of carbohydrates. It is also good for diabetes patients. Another good thing about Chana is that they are low in fat.  Fiber content is more in dark colored variety. Recent studies have also shown that they can assist in lowering of cholesterol in the bloodstream.

The next main ingredient is Rajma.

Kidney beans are high in fiber. So they are recommended daily intake of fiber. There are 15.35 g of protein and .89 g of fat in a serving of kidney beans. But the protein in the beans consists of an incomplete amino acid. So it is recommended that Rajma should be served with a food containing complementary amino acids, such as rice.

Kidney beans are a good source of the minerals manganese, potassium, copper and phosphorus. Other minerals present in kidney beans include zinc, magnesium and selenium. It is also an excellent source of vitamins. It contains vitamin B6, vitamin C, vitamin K, pantothenic acid and vitamin E. The soluble and insoluble fiber in kidney beans helps keep blood sugar levels stable, lowers cholesterol, prevents heart disease and improves overall digestion. The folate and magnesium in kidney beans also contribute to a heart-protective effect.

What We Need
  • White Chana - 1 cup
  • Rajma - half a cup
  • Big Onions - 1 cup chopped
  • Potato - 1 or 2 boiled
  • Roasted groundnut powder - half a cup
  • Roasted gram (pottu kadalai) powder - half a cup
  • Mint leaves - half a cup
  • Coriander leaves - 1 cup
  • Chat Masala powder - half a tea spoon
  • Gharam Masala powder - half to one tea spoon
  • Green chilli paste - 3 to 5 table spoon (according to how much spicy you want it to be)
  • Ginger-Garlic paste - 2 tea spoon
  • Semia - half a cup
  • Corn flour - half a cup
  • Fennel seeds - half to one tea spoon
  • Salt - to taste 
  • Oil - for shallow fry
 

Method
  1. Soak Chana and Rajma over night.
  2. Blend it in a mixie.
  3. Boil potatoes and mash it.
  4. Now take a bowl add chana-rajma mixture, mashed potatoes and chopped onions and mix well.
  5. To this add ginger-garlic paste, green chilli paste, mint leaves, coriander leaves, chat masala powder, gharam masala, roasted groundnut powder, roasted gram powder and salt and mix well.
  6. After mixing well make the mixture into any cutlet shape.
  7. Heat oil in a pan. Oil should be heated well.
  8. Now take corn flour in a bowl add necessary water and mix well.
  9. On another bowl take semia (vermicelli) or noodle pieces
  10. When the oil is heated, take cutlet pieces, dip it in the corn flour batter, roll it in the semia pieces  and put it in the pan.
  11. Shallow fry until the cutlet turns golden brown.
  12. Cutlet is ready.
  13. Serve it with tomato sauce or mint leaves chutney.
Please note that, the cutlet at the level of step 6 can be stored in refrigerator for 3 to 4 days in an airtight box. It can be taken out at any time and fried (following step 7 onwards) and served during this period. This allows you to prepare the cutlets a day or 2 before the arrival of any guest and can be fried and served when they arrive.

Chilli Chicken Manjoorian


This recipe needs no introduction. This is a very famous dish and a very tasty one too. This is one of the easiest chicken dish that you can prepare at home. The only time consuming activity is to peel the garlic. Now-a-days we get to buy peeled garlic in super markets. You could use them if you like to make things easier.

It is better to prepare this dish at home because the chicken manjoorian that we get in hotels, have food color added to them to make them very reddish and colorful. As we eat this we can notice that our hands get a red stain. These food colors are not good for the health.

Below you see a picture of the preparation that I have made. In it I have used green chilli sauce. That is why it looks colorless. If you prefer it to be a little colorful you could use red chilli sauce as well.



What We Need
  • Chicken - 1 kg
  • Ginger - quarter a cup [finely chopped]
  • Garlic - quarter a cup [finely chopped]
  • Soya Sauce - 3 table spoons
  • Red or Green Chilli sauce - 2 table spoons
  • Tomato Sauce - 3 table spoons
  • Capsicum - 3 numbers
  • Onions - 2 numbers
  • Green chillies - 10 to 15 numbers (depends)
  • Coriander Leaves - 1 cup
  • Oil - 2 to 5 table spoons
  • Salt - to taste


Method
  1. Heat 1 table spoon of oil in a pan and add garlic and ginger to it. Saute it well.
  2. Then add chicken pieces, 3 table spoons of soya sauce and salt to taste and mix it well. Then cover it with the lid and allow it to cook in medium flame.
  3. In another pan pour 3 to 4 table spoons of oil and chopped green chillies, chopped onions and then capsicum and saute it well.
  4. To this add a little salt and mix it well.
  5. Lower the flame at this point and add 3 table spoons of tomato sauce, 2 table spoons of red or green chilli sauce, 1 table spoon of soya sauce.
  6. To this add the cooked chicken, mix it well and again cover it and allow it to cook for 2 minutes.
  7. Add coriander leaves.
  8. Chilli Chicken Manjoorian is ready.

Aloo Pudina Paratha


Aloo means potato. Some people call potato, the king of vegetables. There are many things that can be prepared with potatoes.

Pudina is Mint leaves.
Mint leaves have multiple benefits:
  • It helps greatly in digestion.
  • The strong and refreshing aroma of mint is an quick remedy for nausea.  
  • The strong aroma of mint is very effective in opening up block of nose, throat, bronchi and lungs. In short it helps in respiratory disorders. 
  • Regular use of mint is very beneficial for asthma patients.  
  • Mint oil is an anti pruritic, mint juice is an excellent skin cleanser. It soothes skin, cures infections, itching etc., and is also good for pimples.
With this two I have prepared a paratha. Here it is.


What we need
  • Atta (Wheat flour) - 2 cups
  • Potato - 2 big ones or 3 small ones
  • Mint Leaves - quarter a cup
  • Coriander leaves - quarter a cup
  • Green chillies - 2 or 3 as per your preference
  • Cumin powder (Jeera) - half a tea spoon
  • Oil for frying
  • Salt - to taste
 

Method
  1.  Prepare chapathi batter.
  2. Boil the potatoes and mash it well.
  3. Blend mint leaves, coriander leaves and green chillies.
  4. To the mashed potatoes add this mixture with cumin powder and salt and mix well.
  5. Prepare balls of the mashed potatoes depending on the size of the chapathi.
  6. Take some batter enough for one chapathi, flatten it a bit and place the potato ball in it and cover it. 
  7. Now roll out the stuffed ball and the item is ready.
  8. Fry the paratha.
  9. Aloo pudina paratha is ready
This can be taken with any side dish or preferred sauce. Hope you enjoy this dish.
